Cheese StandardsUltrafiltered Milk Comments The International Dairy Foods Association (IDFA) and NMPF submitted these comments in January 2006 regarding the Food and Drug Administration’s (FDA) proposal to amend its regulations to provide for the use of fluid ultrafiltered milk in the manufacture of standardized cheeses and related cheese products.
Letter to FDA Objecting Change in Cheese Standards This letter was sent to FDA in February 2000 objecting a change in cheese standards to allow for the use of dry ultrafiltered milk.
Ultrafiltered Milk Letter to FDA Composed in December 1999, the purpose of this letter was to unconditionally endorse a Citizen Petition submitted to FDA by the American Dairy Products Institute (hereafter, “ADPI petition”). The ADPI petition sought to allow for the use of liquid ultrafiltered (UF) milk in cheese making. NMPF was also aware that the National Cheese Institute (NCI) submitted a Citizen Petition pertaining to the same general subject on February 10, 2000. This petition was rescinded by NCI in favor of a revised petition on June 9, 2000 (hereafter, “NCI petition”). NMPF fully endorsed the ADPI petition to allow only liquid UF milk to be used in cheese making and strongly opposed the NCI petition.
